Carolina Dogs




Ingredients

Honey Coleslaw
4 cups of finely shredded cabbage (2 cups of red cabbage, 2 cups of white cabbage)
1/3 cup of mayonnaise
2 tablespoons of honey
1 tablespoon of apple cider vinegar
¾ cup of shredded carrots
Salt and pepper, to taste

Coney Island Style Chili*

2 pounds of lean ground beef
2 large onions, chopped
1 can of tomato paste (6 ounces)
4 tablespoons of chili pepper powder
1 tablespoon of garlic powder
1 tablespoon of sugar
1 teaspoon of allspice
½ teaspoon of salt
½ teaspoon of cayenne pepper
½ teaspoon of smoked paprika
¼ teaspoon of cinnamon
1 ½ tablespoons of apple cider vinegar
1 teaspoon of Worcestershire sauce
4 cups of water

Directions

Honey Coleslaw
1. Toss the shredded cabbage and carrots, set aside.
2. Whip the remaining ingredients together. Add to cabbage/carrots and toss ell.
3. Cover and chill for 30 minutes to one hour.

Coney Island Style Chili*
1. Place a large pot over medium high heat. Add two tablespoons of vegetable oil and then add your chopped onions. Season with a pinch of salt and cook until onions turn translucent.
2. Then add the beef and continue to cook until the meat is fully browned.
3. Then remove 70 to 80% of the meat to a blender or food processor. 4. Add two cups of water and blend quickly for 4 to 5 pulses. If you want the chili to have no lumps at all, blend all of the meat.
5. Pour the mixture back into the pot. Then add the remaining two cups of water. Pour in the remaining ingredients including the salt.
6. Bring to a boil and then turn down the heat and let it simmer for 2 to 3 hours before serving.

* Note: For those of you that may be unfamiliar with Coney Island style chili, here's an alternative recipe.

Ingredients:
Beef franks (we suggest Hebrew National)
Honey coleslaw
Mayonnaise
Apple cider vinegar
Salt and pepper, to season
Coney Island style chili
Celery salt
Mustard
Toasted buns

Directions:
1. Cook hot dogs on grill or grill pan.
2. Place dogs on toasted buns.
3. Add Coney Island style chili.
4. Top with coleslaw.
5. Season with celery salt.
6. Serve with your favorite beer.
