Compound Butter with Salmon & Sweet Corn



Ingredients

Fennel Leaf, finely chopped
Butter
Lemon
Champagne
Sweet Corn, cooked and removed from stalk
Salmon
Shallots, minced
Dijon Mustard
salt
pepper

Directions

Take softened butter, add minced shallots, salt, lemon, Dijon mustard, fresh cracked pepper, champagne, finely chopped fennel leaf, mix together till well blended. Place on parchment paper or wax paper and shape into a roll and freeze. Grill salmon, place on plate with a slice of the compound butter on top, garnish with sweet corn, Enjoy!
