DirectionsSeparate eggs and egg whites. Mix eggs whites till they are fluffy. For the batter mix cornmeal, flour, baking powder, milk, butter milk, and egg yolks. Mix together. Take the egg whites and fold them into the batter, and add a little more buttermilk. In a non-stick pan, place butter and pour batter, cook one side and flip and cook the other. For the creme fresh, mix buttermilk and sour cream and set aside.
Place the pancakes on a plate and add salmon creme fresh, top with chives and garnish with fresh fruit. Enjoy!
