Roast Duck with Pineapple Sauce



Ingredients

Roasted Duck
Pineapple, chunk and crushed
Butter
Salt
Pepper
Brown Sugar
Sherry Wine
Asparagus
Demi Glace
Rum
Chives

Directions

Roast Duck, remove breast and add some duck fat, butter, salt and pepper. Place in oven till crispy. In a sauce pan, place butter, chunk and crushed pineapple, brown sugar, salt, pepper, demi glace, pineapple juice and reduce. Add rum, let it flame, then remove from heat, add cold butter and mix. Place cooked asparagus on plate, add crispy duck breast, spoon pineapple sauce over and garnish with chives! Enjoy
