Eggs Florentine


Butter, fresh spinach, heavy cream, Parmesan cheese, Swiss cheese, chopped shallot, eggs, salt & pepper.


Warm dish in 500 degree oven. When warm, add butter to dish. Place spinach in dish. Add Swiss cheese. Add shallots. Add 2 eggs into each dish. Add salt & pepper to taste. Finish with Parmesan cheese. Put back into oven until eggs set. Approximately 5 minutes. Finish with more cheese.
