Lobster Americaine


Lobster, lobster stock, noodles, tomato paste, tomatoes, shallots, garlic, thyme ,parsley, chives, butter, parmesan, salt & pepper, red pepper, madeira, coniac, white wine, and heavy cream.


Cook garlic and chopped shallots for a couple of minutes. Add butter, chili flakes, tomatoes, thyme, salt and pepper, and cook down. Add tomato paste, lobster stock, and white wine and let reduce. Add lobster and heavy cream, let reduce. Add madeira, a touch of coniac, parsley, and just a few chives. Add cooked pasta. Finish with Parmesan and chives.
