Cook manicotti noodles for not more than 7 minutes. In a sauce pan put the olive oil, garlic, red pepper, dried oregano, crushed tomatoes, salt and pepper. Mix together and set aside. Next place the ricotta, mozzarella, parmesan, chopped parsley, salt, pepper, eggs and mix together. Fill the shells and place on top of sauce in a baking dish. Add more sauce on top, with some more parmesan and mozzarella then bake. Top with some more parmesan and Italian parsely.....Enjoy!
