Cream of Tartar
Take about 7 egg yolks, sugar, grand marnier and cook over a double boiler, whisk continually and off heat making a pudding like texture. Then take the egg whites, cream of tartar, sugar, vanilla and whip till firm. With the pudding mixture add the orange zest and a little of the meringue folding into the pudding mixture till smooth. Then add the rest of the meringue. Place in bowls and bake in oven till brown on top. On a plate placed the pastry cream, some orange slices, raspberries, place the grand marnier souffle add a little powdered sugar and drizzle some grand marnier on top. Enjoy!
